Breakfast Banana Pancake

This is a super quick and easy pancake that is packed full of good healthy nutrients to keep you going all morning !

Every time I make these banana 🍌 pancakes make the whole kitchen smells wonderful and gets the family running to the breakfast table.


This recipe has evolved over the years and I am happy with the way this one turns out. Feel free to use different fruits, strawberries are my favourite and I also recommend blueberries or peaches or mixed berries. I sometimes add some walnuts or almonds to top it off. I really feel the coconut oil adds a delicious flavour that pairs well with the banana. This breakfast packs in all the nutrients you need to start your day off well and keep you going! Breakfast Banana Pancake


Ingredients

  • 1 tbsp coconut oil

  • 1 banana

  • 1 egg

  • 1 tsp cinnamon

  • 1 tsp pure vanilla extract

  • dash of salt

Topping:

  • 1/4 c plain greek yogurt 2% fat

  • 1/2 c frozen, thawed strawberries

  • 1 tsp maple syrup

  • 1 tbsp walnuts (optional)

Directions


  1. Melt the coconut oil over medium heat in a skillet

  2. In a medium size bowl mash the banana with a fork, mix in the egg, mix well. Stir in the cinnamon, vanilla and salt. Make sure all ingredients are well combined. Add mixture to heated skillet. Cook for approximately 3-4 minutes, flip and continue cooking for another 2-3 minutes. Cooking times are approximate, banana pancake should be firm and starting to turn brown before flipping.

  3. Remove banana pancake from the skillet and place on a plate topping with yogurt (mix maple syrup in with yogurt before), strawberries and walnuts if using.
