Breakfast Time Baked Oats

These baked oats are delicious and simple to make with only 6 healthy ingredients. They taste like having dessert for breakfast !

There are many different varieties of these oats that you can make. I will give you the base recipe and then 6 six different additions or feel free to create your own variations ! Let us know what delicious ideas you come up with ! You can bake these in individual ramkins, muffin tin or for a larger batch in a casserole dish. They will remind you of a small cake or muffin.


Oats are a powerhouse of nutrition. They are a whole grain (naturally gluten free) and a great source of important vitamins, minerals, fibre and antioxidants. Oats have many health benefits which include weight loss/management, lower blood sugar levels and a reduced risk of heart disease. Breakfast Time Baked Oats are a great, nutritious and delicious way to love oats and easily add them to your diet.


Breakfast Time Baked Oats

Servings: 1


Ingredients

  • ½ cup rolled oats (any type except steel cut oats)

  • 1 ripe banana

  • 1 large egg

  • 1 tbsp of honey (pure maple syrup will work too)

  • 1/2 tsp baking powder

  • dash of salt

Directions


1. Preheat oven to 350°F (175 C) and grease an 8 oz (1 cup) ramekin or spray with cooking spray.

2. Blend all the ingredients in a blender until smooth, let sit for 5-10 minutes.

3. Transfer to greased ramekin, add your favourite toppings (see suggestions below) and bake for 20 minutes until puffed up and cooked through. Makes 1 serving. Serve hot. Increase baking time to 30 minutes if making a large batch in a casserole dish.

Note: this dish is best serve hot and fresh.


Flavour variations:


Blueberry Lemon: stir in to the blended batter 1/2 c blueberries and 1/2 teaspoon grated lemon zest. Top with some more blueberries and sprinkle with brown sugar (optional), then bake.

Raspberry Almond: Stir in to the blended batter 1/4 c raspberries and 1 tsp sliced almonds. Top with raspberries and almonds and 1/2 tsp brown sugar (optional) and some chopped dark chocolate, then bake.

Carrot Cake: stir in to blended batter 1/4 c grated carrot, 1/2 tsp cinnamon and 2 tbsp of chopped pecans. Top with more chopped pecans.

Chocolate chip: stir in to blended batter 2 tbsp miniature chocolate chips. Top with sliced banana and shaved dark chocolate, then bake.

Chocolate zucchini: stir in to blended batter 1/4 c shredded zucchini and 1 tbsp of unsweetened cocoa powder. Add a tbsp of honey or maple syrup if you want some extra sweetness, top with dark chocolate then bake.

Peanut butter and jelly: Remove a scoop of batter from the ramekin and fill with 1 tbsp of peanut butter and 1 tbsp of strawberry jelly. Place the removed scoop of batter on top. Top with 1/2 a strawberry and a sprinkle of coarse sugar (optional), then bake.
